A recipe for Pumpkin Muffins using only these two ingredients
Yep that's right, just a yellow cake mix & a can of pumpkin, that's it, that is all you need to make an amazingly moist and delicious muffin. No eggs, oil, water. I know it's hard to believe huh! But I wouldn't lie to you at least not about this?
Now of course my Tim the Tool Man {insert grunt noises here} side took over. If only TWO ingredients tasted oh so delicious, then what if I added just a few more things? So, to one batch I swirled in some cream cheese that I had whipped with a little sugar and vanilla. To one batch I added some brown sugar, cinnamon, vanilla, raisins and some chopped pecans. To the last batch I added some chocolate chips.
I made Mini Muffins
1 Batch = 1 cake mix & 1 can pumpkin which made 24 mini muffins
Yummalicious!!!!
On the left is the chocolate chip, middle is the cream cheese and the right is the nut & raisin
Now, I have to admit, I am So NOT a Pumpkin person, NO, No, No!
You would Never catch me eating a slice of pumpkin pie, GROSS!
But I really did LIKE these! I know it surprised me too!
So if you are a fellow pumpkin taste hater, give these a try, you might just be surprised too!
Disclaimer; I did not taste test the chocolate chip ones. Chocolate YUCK!!!
(I know, you are not the first one to think I'm weird because I Don't like chocolate)
But the hubby did the taste test for me and he gave them a two thumbs up.
I didn't measure when mixing mine, I just added what looked about right, I am a throw it in type cook,
which drives my Mother absolutely crazy, which may be why I do it!
(oops my little devil horns are showing again)
But for those who need like a bit more details {Mom} here is approximate measurements for you.
Vanilla Extract = 2 tsp
Cinnamon = 1 tsp
Cream Cheese = 1 8oz pkg. softened, beat with about 1 or 2 TBSP. Granulated Sugar
Brown Sugar = 1/4 C
Raisins = 1/2 C
Chopped Nuts = 1/2 C (I used Pecans)
Chocolate Chips = 1 C
These are just guestimates, because again I didn't measure when I made mine, I just eye balled it.
So get creative, have fun with it, you really can't go wrong, that is the wonderful thing about this basic recipe.
By the way they taste absolutely delicious with just the two ingredients.
